Comings and Goings

*Hawaii- 15 days- oh my god!
*Jenna's baby- Luke Henry, so exciting!
*Jameson's First Birthday- I can't believe he's ONE, but moreso I can't believe how absolutely adorable he is
*Kitchen- it's a 'goings' it's getting going, very fun.
*Sex & the City- unless Jenna has her baby, then I probably won't go
*Bookclub- read the book, just finished today. can't wait to talk about it
*Next Bookclub is scheduled for July 16th at my house- book picked is Escape by Carolyn Jessop

*Cathy's house to make post-baby food for Brian and Jenna- wow, that was fun and funny! Poor Cathy dropped a whole pan of mac and cheese in the bottom of her oven. There were only about 5 noodles left in the pan after if flipped/bent!
*Deck staining: it doesn't look terrible, but really doesn't look very good either- bummer b/c we spent so much time on it. And passed up the deck the whole Memorial Day weekend.
*Homemade Spanikopita with Chicken. Oh my LORD it was yummy

4 packs frozen spinach (thawed, squeezed dry)
6 cloves garlic, minced
1/3 or so, sun dried tomatoes in olive oil- chopped
1 fat free block of cream cheese
1 container crumbled feta
zest of 1 lemon
salt and pepper
~1 lb skinless, boneless chicken breast, chopped into bite sized pieces
Phyllo dough (can be found in freezer section)

In med-hi pan with oil, saute garlic for 2 minutes, add tomatoes and spinach. Cook until dry. Remove from heat, cool briefly. Add cheeses, lemon zest salt and pepper. Mix with spoon until incorporated.

Line a square baking dish with 5 sheets of phyllo dough brushing each with olive oil. Add 1/3 spinach mixture and 1/2 chicken on top. Spread over whole container. Add 5 more phyllo sheets, brushing with oil. Press down to fill any gaps. Add 1/3 spinach and 1/2 chicken and repeat with the phyllo. Add remaining 1/3 spinach mix and 5 more pieces of phyllo.

Bake in oven at 350 for about 40 minutes. Until top phyllo is brown and crunchy. Enjoy.
